Pineapple Serrano Margarita




Skip the margarita machine and grab the muddler. This is basically a Cadillac margarita but made sweeter with pineapples and balanced with a little heat from the serrano chilis.

This last week was the premier of The Dark Knight Rises and I had every intention of going to see it. I even geeked about it on Twitter with Julie of Table for Two. But as adult life would have it, we weren’t able to.

Gone are the days of lining up for movies – yes, I use to do that and it was awesome. Also gone are the Comic Con days of heading down to San Diego, to hunt for rare and/or limited issues. Seriously, I know I can’t be the only geek turned parent that misses that. But small confession, like a proper geek, I have been dosing my son since before he could talk with Justice League cartoons, Batman and other action heroes.

It’s working, I’m the proud mom of a two year back-to-back Batman dresser. Yes! Okay, sorry, I’ve gone way off in this post. So before I lose you lets talk margarita.

Julie and I decided we were both going to make cocktails to celebrate the movie and have a drink via our blog since we don’t live near each other to do it in person.

My cocktail has nothing to do with the movie, but it is a cocktail that I wouldn’t mind making for the Dark Knight, since much like him-this is a classic made modern and made better.



Ingredients:

  • 4 (1/2- to 3/4 inch) chunks peeled pineapple
  • 2 slices serrano chile with seeds
  • 1/4 cup 100% blue agave silver tequila
  • 2 tablespoons fresh lime juice
  • 2 tablespoons simple syrup (see below for a homemade recipe)*
  • 1 tablespoons Cointreau


Directions:
Place pineapple chunks and serrano chilies slices in a shaker, using a muddler or back of wooden spoon mash solids.
